Middle Eastern Food and Pizza Have No Business Being Together.

Or so I thought.

One is built around centuries-old spices, tahini, hummus and fresh herbs. The other is melted cheese, pepperoni and everything we love about comfort food.

Who looked at those two completely different cuisines and thought, "Let's put them together?"

Apparently somebody at Canary Club. And somehow...they pulled it off.

Actually, they pulled it off so well that I've now been back three times.

Every visit answered the same question a little differently:

What else are they doing here that shouldn't work...but somehow does?

I'll admit something. I walked in fully expecting the pizza to be my favorite part of the meal. I mean, that's why you go to a place that serves pizza, right?

Wrong.

At my server's recommendation, I ordered the Tehina Hummus with warm sourdough za'atar pita and fresh vegetables. I figured the hummus would be...fine. The pita would probably steal the show. Instead, I found myself reaching for the vegetables.

The vegetables.

I still don't know how that happened. Apparently I've been underestimating hummus for my entire adult life.

Now let's talk about the pizza.

On my first visit I ordered the Harissa BBQ Chicken Pizza with goat cheese, brisket bacon, poblano peppers, onion petals and fresh coriander. If someone had described that combination to me before I came, I probably would've smiled politely and ordered something safer.

I'm glad I didn't.

The smoky sweetness of the harissa, the tang of the goat cheese, the fresh herbs and that beautifully blistered sourdough crust somehow made more sense with every bite. It shouldn't work. But it absolutely does.

That's the thing about Canary Club.

Nothing feels familiar.

Yet somehow…everything feels right.

I went back a second time. Not because I couldn't stop thinking about the pizza. Because I couldn't stop thinking about the hummus.

Read that sentence again. I went back...for hummus.

While I was there, I ordered the Pepperoni Pizza. Even that wasn't what I expected. The sujuk pepperoni, whipped ricotta, roasted peppers and za'atar honey somehow made one of the most familiar pizzas on the planet feel brand new.

Then we shared the Lemon Olive Oil Cake. By this point, I'd learned my lesson.

When Canary Club puts ingredients together that don't seem like they belong...

Just order it.

They've earned that trust.

By my third visit, I took my son. Not because I needed convincing. Because I wanted to see what we'd discover next.

We ordered the Nightshade pizza and added brisket bacon. Good decision. Very good decision.

Three visits.

Three completely different meals.

Not one disappointing bite.

That's rarer than it should be.

So if it's your first visit, here's my advice.

Start with the Tehina Hummus. Yes...I'm telling you to order hummus. Get both the warm pita and the vegetables.

Then choose the pizza that sounds the most unlike anything you've ever ordered before.

You're not coming to Canary Club for ordinary. Don't order ordinary.

One of the things I admire most about Canary Club is that it quietly rewards curiosity.

Every visit reminds me that the dishes I end up loving most are usually the ones I never would've ordered on my own.

Maybe that's true of more than just restaurants. Sometimes the best meals begin with five simple words:

"There's no way that works."
